Kerala-Style Fried Squid

Hello, dear readers. It's been a while, hasn't it? Both mom and I  have our plates full  with various commitments right now but things will settle down soon and then it will be business as usual around here. Until then, I leave you with this recipe for a traditional Malyali dish that is simple yet lip-smackingly* good. I’m not a huge fan of sea food (I don’t eat anything that has/had fins), and while I’m generally iffy when it comes to squid, I do love it when it’s prepared this way. It works great as a side with rice and curry, with chappatis or if you want to keep it simple, with nothing but a few slices of bread to mop up the masala. Yum.

* I never thought I’d be the sort of person to use words like ‘lip-smacking’, but here I am.

Stir- fried Squid (Koonthal Porichathu)

Ingredients:

250 g squid cut into 1/2 inch pieces

1/2 tsp garlic paste

2 tsp red chilli powder

1/2 tsp turmeric

1/2 tsp black pepper, ground

1 tsp rice flour

1 tsp salt

1 tsp lime juice

3 tbsp coconut oil (or vegetable oil, if you prefer) 

Method:

Marinate the squid in all the ingredients except the oil. 

Leave for 2 hours at room temperature.

Heat the oil in a skillet and stir-fry the squid over high heat for 3-5 minutes. Be careful not to stand too close to the pan, squid spatters when it's being fried.

Serve hot.
